Any monophonic instrument can be used for recording sounds. For example you can use plucked strings as guitar, guitas bass, non-plucked strings such as violin, cello, woodwinds (recorder, bassoon, oboe) or even brasses like flute, saxophone, trumpet etc.
Play it by ear with your voice and get MIDI sound in real-time.
