While the quality of videos distributed on multiple CDs tends to be quite decent, having to manage several files for just a single film is truly frustrating. Besides making the resulting files smaller, however, this conversion feature also makes the whole process rather protracted, as compared to actually merging files. Moreover, you do not practically get to adjust many options before you perform a conversion: the only things to choose are video and audio codecs, which cannot even be fine-tuned, and the frame rate.
