Analogue Ripper lets you record sound from any source, edit the recording into tracks and send the tracks to iTunes.
The recorder can be set to record for a fixed time, or to pause or terminate after a period of silence - at the end of one side of a record or tape.
The editor displays the recording in an easily understood way, and the track hunter feature can find the starts and ends of tracks.

I would have given it 5 stars, but it hasn't been updated and optimized for the mountain OS versions so it's a bit glitchy sometimes.
